Blueberry Struesel Muffins, what a yummy morning :)

These were yelling at me to make them,
so I had to obey :)

Ingredients:
1/3 cup sugar
1/4 cup butter or margarine, softened
1 egg, beaten
2 1/3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1 1/2 cups fresh or frozen blueberries

STRUESEL:
1/2 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine

Directions:

In a mixing bowl, cream sugar and butter.

Add egg; mix well.

Combine flour, baking powder and salt;
add to the creamed mixture alternately with milk.
Stir in vanilla.

Fold in blueberries.

Fill 12 greased or paper-lined muffin cups two-thirds full.

In a small bowl, combine sugar, flour and cinnamon; cut in butter until crumbly.
Sprinkle over muffins.
Bake at 375 degrees F for 25-30 minutes or until browned

OK, OK, I filled mine a little to full,
but in my defense, ummm...I like them that way!
That's my story and I'm sticking to it.

Now go make some blueberry muffins,
your tummy will thank you.

Original Toll House Chocolate Chip Cookies

The hubby wanted chocolate chip cookies.
He takes his lunch to work most days and always thinks he needs a treat !
Since I love cooking and baking, I have been making him treats for his lunch lately :)
Today I made the original toll house cookie recipe from the back of the bag,
or you can find it here

I added milk chocolate and white chocolate chips.
Thought I'd mix it up a bit :)

Nice and hot, right out of the oven.

Yummy, come to Mommy !
OOOOOHHHHH, these are so much better then store bought.
Go make yourself a treat, you deserve it ;)

The Best Chocolate Cake Ever. EVER.

Tony has been wanting chocolate cake for a while.
I wanted to make him something better then the standard boxed cake.
After looking at 5,000 different cake recipes, I found this one.
It looked amazing.
It was titled "The Best Chocolate Cake Ever"
Since recipes don't lie, I had to make it, only the best for my hubby !!
And bonus, it came with a frosting recipe !

The Best Chocolate Cake Ever
Ingredients:

1 box devil’s food cake mix

1 small box Jello instant chocolate pudding mix (not the sugar or fat free kind!)

1 cup sour cream

1 cup vegetable oil

4 eggs, beaten

1/2 cup milk

1 tsp pure vanilla extract

2 cups mini semisweet chocolate chips

All you do is dump everything except the chocolate chips into a very large bowl,
a 4 qt bowl is good,
Mix well. The batter will be thick!

Add your 2 cups of chocolate chips to the batter.
Mix well.

Pour the batter into a greased cake pan of choice.
Okay, it doesn’t really pour.
It’s very thick. “Scoop” your batter into your cake pan.

I like to bake my cakes in two, 9-inch cake pans. It tells you the cooking times for specific pans on the back of the cake mix box. I used that as a guide. I needed to add about 10 mins to the time.  I ended up baking my two, 9-inch pie pans for 45 mins. You definitely don’t want to over bake. Do the toothpick check, but remember, you may get some of the chocolate from the melted chips on your toothpick so don’t let that fool you.

Oh man.......warm and fresh out of the oven…
Let it cool…
In the mean time, let's make the frosting.

 Best Frosting Ever
Ingredients:

1 cup shortening (crisco)

4 cups powdered sugar

1/4 tsp salt

1 tsp vanilla extract

1/3 cup heavy whipping cream

In a mixing bowl, cream shortening until fluffy.

Add sugar slowly and continue creaming until well blended.

Add salt, vanilla, and whipping cream. Blend on low speed until moistened,
then beat at high speed until frosting is fluffy.

Now that the cake is cool.
Let’s put some frosting on this baby.

Don’t forget to put a nice helping of icing between the layers!

There you have it.

And there it goes...

Enjoy !
