I have been making this recipe for years and years and years. This is my favorite fruit salad !! I got the recipe from my sister when she worked in the deli at a grocery store. This salad reminds me of summer. I love to make it when we cook on the grill, it goes great with burgers, grilled chicken, even hotdogs. If you love taffy apples, you will love this salad. Its light and fresh tasting. I add the peanuts right before serving as I don't want them to get soggy.
Ingredients
1 tablespoon all-purpose flour
1/2 cup white sugar
1 egg yolk
2 tablespoons cider vinegar
1 (8 ounce) can crushed pineapple, drained with juice reserved
4 large apples, cored and diced with peel
2 cups unsalted peanuts
1 (8 ounce) container frozen whipped topping, thawed
Directions
1.In a medium saucepan combine the flour, sugar, egg yolk, vinegar and reserved pineapple juice. Cook over medium heat until thick. Remove from heat and chill.
2.in a large bowl combine the pineapple, apples, peanuts and chilled cooked mixture. Fold in whipped topping and chill for at least 1 hour before serving.
Now, that looks like something I could get addicted to! Yum!

i tasted this recipe in a grocery store deli section...this recipe tasted like it was made with a sweet vanilla-like yogurt taste instead of whip cream...and yes add the peanuts right before serving so they are not chewy...
